  • 12:50 pm - 1:20 pm -- 1st rotation
  • 1:20 pm - 1:50 pm -- 2nd rotation
  • 1:50 pm - 2:20 pm -- 3rd rotation
    • Rotations include:
    • Sensory: flavor wheel and where the flavors come from (Sudwerk)
    • Yeast: population and genetics- microscopes (UC Davis or White Labs)
    • Mash Chemistry: optimization (Peter A’Hearn and Sudwerk Brewhouse)
  • 2:30 pm - 3:00 pm -- Dr. Charlie Bamforth presentation
  • 3:00 pm - 3:30 pm -- Network & Drinks
    • (purchase swag)
  • 3:30 pm -- Transportation pick-up
  • 4:00 pm - Return to Safe Credit Union CC

FIELD COURSE

Explore Sacramento with our hands-on field course! This optional course offers a unique learning experience and requires advance ticket purchase. Seats are limited and available on a first-come, first-served basis. The ticket price includes round-trip bus service from the SAFE Credit Union Convention Center. Please arrive 15 minutes before departure to ensure a smooth start. Lunch will be provided only where noted; bringing your own snacks is recommended.

FC01: The Science in Your Beer: Chemistry, Microbiology, and Sensory Analysis at Sudwerk Brewery

From prehistory to our own time, beer has evoked awe and fascination; it seems to have a life of its own. This one-of-a-kind workshop/tour/tasting will take you on a fascinating journey, explaining the underlying science and chemistry at every stage of the beer-making process. We will explore yeast microbiology, how to use a mash to study enzyme action, basic water chemistry, and an examination of the chemistry of beer flavor. We’ll finish with a rousing presentation by Dr. Charles Bamforth Located a short distance from Sacramento in the city of Davis, Sudwerk Brewing Co. has been crafting some of the finest German style lagers found in California since 1989. Lunch, tour, hands-on labs, and tasting included in the price.

Note: Participants must be of legal drinking age (21 or older). ID required.
